It feels like forever since I have done a blog post and I couldn’t leave y’all hanging. If you have been following me for a while on social media or on the blog, you know that I love to cook.
Why not give you guys so fun and easy summertime recipes that I use for the 4 of July. A course it is summertime and we love the food that comes with summer but it is important to have something light and refreshing especially with most of the summer activities being outside.
If you are wanting something simple to make in less than 20 mins. Meatballs is the way to go. You can shop at your local grocery store to get 3 simple ingredients.
- Frozen Meatballs (1-2 lb bag)
- BBQ Sauce (18-20 oz bottle)
- *Flavor is your choice
- Grape Jelly (20 oz bottle)

Cool Pasta Salad
Who doesn’t love a delicious pasta salad?! Remember it doesn’t have to complicated so keep it simple.
- Pasta of your choice: I usually go for the Tri-color pasta or linguine pasta
- Olives -1 can
- Cucumbers- 2 cucumbers
- Cherry Tomatoes-1 pint
- Purple Onion
- ham -1 cup
- Turkey -1 cup
- Italian dressing – 1 cup
Black Bean Quinoa Burger
This is a vegan friendly recipe that is really delicious even for our non vegans.
- Black Beans-1 can
- Quinoa -1/2 cup
- Corn -2/3 cup
When preparing your black bean burger it is important to cook the Quinoa as if you would cook rice. Mash the black beans so that it is easier to form your burgers. When your Quinoa is finished cooking, you will combine your ingredients to form a patty.
- Vegan mayo(mayo of your choice)
Combine the two ingredients to meet your taste buds.
You can top the burgers with avocado slices, onion, and place on whatever bread of your choosing.
- Purple onion- 1/2 chopped
- Lime Juice-1/2 lime
- Cilantro-1 tbsp
- Salt & Pepper to taste
Throw it all in! Mash and stir!
Refreshing Fruit Salad
- Strawberries-1 lb, sliced
- Kiwis-4, peeled & sliced
- Blueberries- 1 pint
- Pineapple -1, diced
- Grapes- 2 vines
Mix it all up and serve it in a dish of your choice.
